This holiday favorite is sourced from the beef's rib section, specifically from the 6th rib to the 12th rib. When cut further down, these roasts become bone-in ribeyes, known for their exceptional flavor and juiciness. COOKING NOTES

To achieve a perfect medium-rare roast, start by preheating your oven to 500°F. Roast the standing rib roast for 10 minutes to develop a crisp outer layer. Then, reduce the oven temperature to 225°F and continue cooking until the internal temperature reaches 125°F. For a complete meal, create a bed of vegetables underneath the roast in the roasting pan. Allow the roast to rest for at least 10 minutes before serving for optimal flavor and juiciness.
