That belief is why we work directly with farms rather than purchasing anonymous boxed meat from national distributors. When you buy from us, you are buying from people we know and producers we trust.
At Chop Shop,
exceptional meat begins long before it reaches the cutting board. We work directly with trusted farms across North Carolina, including Apple Brandy Beef in Wilkesboro and Warren Wilson College Farm in Swannanoa, where animals are raised with care, patience, and strict standards for feed, health, and welfare.
From there, everything happens in
our shop. We stay closely connected to the farms and the process that brings each animal to our door, ensuring full transparency from pasture to butcher block. Our butchers break down whole animals using traditional, heritage techniques, dry age our beef in-house to deepen flavor and tenderness, and produce house-made sausages and charcuterie that celebrate the full craft of butchery.
The result is meat with real flavor, full transparency, and a level of craftsmanship rarely found in modern grocery stores. Our commitment to responsible sourcing and butcher craft has earned the trust of Michelin-recognized restaurants, local chefs, schools, and families across North Carolina.
