Instructions:
Step 1: Bring the turkey to room temperature
  • Remove the turkey from the fridge and leave it on the counter for 1 hour.
  • Keep the turkey in the baking bag and pan during this time.
Step 2: Preheat the oven
  • Set your oven to 350°F and allow it to fully preheat while the turkey rests.
Step 3: Prepare the turkey for reheating
  • Without removing the turkey from the baking bag, pour 1 quart of stock (chicken or turkey) into the bottom of the bag around the turkey. The liquid will create steam and keep the turkey moist.
  • Fold the open end of the bag under itself or loosely gather it to ensure the moisture stays inside during cooking.
Step 4: Reheat at 350°F
  • Place the turkey (still in the baking bag and pan) in the oven and heat for 1 hour.
  • Avoid opening the oven during this time to maintain even heat.
Step 5: Crisp the skin
  • After 1 hour, carefully remove the turkey from the oven.
  • Open the top of the bag and pull it back to fully expose the turkey skin, being cautious of the hot steam.
Step 6: Finish at 425°F
  • Increase the oven temperature to 425°F.
  • Return the uncovered turkey to the oven and roast for 10 minutes to crisp and brown the skin.
Step 7: Rest and serve
  • Remove the turkey from the oven and let it rest for 10–15 minutes before carving. This allows the juices to redistribute for a flavorful meal.
